S’mores in a jar with vegan chocolate mousse

These little jars include all of our favorite s’mores components and are completely vegan. Make them in advance for any summer parties or picnics! They’d also be an awesome healthy 4th of July dessert.

Hi friends! Re-sharing this blog post today because the recipes is SO GOOD and the ideal summer dessert.

I’m so excited to tell you about these s’mores in a jar aka that one time I set off the fire alarm while P was napping. #sacrifices

They were definitely worth it when Liv and I were sitting at the counter, clanking spoons together (“cheers”) and mmmm-ing our way through our respective jars.

Our pool is finally finished, and while summer is almost over, we’re determined to have as many get-togethers as possible until it cools down. (In Tucson, this doesn’t typically happen until around Halloween).) Desserts in jars usually come to mind for summer parties, especially since they’re easy to make in advance.

Here’s a new dessert for ya if you’re planning get-togethers, or want the PERFECT summer dessert. It’s easy to create a vegan and gluten-free option -just use gf graham crackers and grab ‘mallows at the health food store that suit your needs. This little jar of happiness has all of the flavors of a classic s’more.

There’s a graham cracker bottom,

Vegan cashew chocolate mousse

and creamy vegan cashew chocolate mousse,

Vegan cashew chocolate mousse

+ toasted marshmallows + chocolate chips and graham cracker crumbles on top.

Vegan smores in a jar

In a nutshell, you need this in your life.

The best part: make it in advance and when you’re ready to serve, just toast your marshmallows (preferably oven a grill or open fire instead of with the same lighter I use to light candles)

Lighter and vegan cashew chocolate mousse

and top with chocolate graham crumbles and chocolate chips.

Bring them out onto the patio after dinner, and watch everyone else break out into evil creepy grins.

S’mores in a jar with vegan chocolate mousse

A decadent vegan chocolate pudding with all of the classic s’more components. Perfect for summer desserts and parties!

  • Prep Time: 75
  • Total Time: 1 hour 15 minutes
  • Yield: 4 1x

Ingredients

Scale
  • 2 1/2 cups soaked raw cashews (soak at least 1 hour and rinse)
  • 1 1/2 cups cacao powder
  • 1 cup maple syrup
  • 1/2 cup honey
  • 1 teaspoon vanilla
  • 1/2 teaspoon sea salt
  • 1/3 cup water
  • 3/4 cup melted coconut oil
  • Graham crackers, marshmallows and chocolate chips for serving

Instructions

Follow this order exactly– it will make all the difference in the world

  1. In the Vita-mix, or a high-speed blender, add the cashews, maple syrup, honey, vanilla, sea salt and water. Blend well until smooth and creamy (you may have to use the Vitamix stick thingy, whatever it’s called haha)
  2. Add the cacao powder and blend until mixture is totally smooth- no lumps, mmm k? Once again, use the Vita-mix stick thingy.
  3. Lastly, add the coconut oil and blend until smooth.
  4. Grab 4 small Mason jars and sprinkle the bottom of each one with graham crackers.
  5. Pour the chocolate mixture into the jars. You can store these covered in the fridge to top later.
  6. When you’re ready to serve, top with toasted marshmallows, more graham crumbles, and chocolate chips.

Notes

  • You can use this raw mousse as a pie filling, too! Pour into a graham pie crust, top with marshmallows, and broil in the oven. YUM.

This looks delicious. I bet it would taste great with the coconut milk chocolate frosting shots (I think Chocolate Covered Katie has the recipe I’m thinking of) as well. Great idea for a summer dinner party!

Looks delish! PS honey isn’t vegan but you could easily swap it with vegan honey or agave or something. Thanks for the recipe!

Neither are marshmallows! (But Whole Foods does have some vegetarian ones, not sure if they qualify as vegan, though.)

      • Fitnessista on June 22, 2017 at 1:55 pm

Many marshmallows contain gelatin but it’s easy to find vegan ones. The ones from thrive market are vegan 🙂

    This looks DELICIOUS!

I believe you can buy vegan marshmallows, but standard marshmallows are made with gelatin and are thus non-vegan/vegetarian. I wonder if you can roast vegan marshmallows or if they just come apart…I volunteer to taste test!

    • Fitnessista on June 22, 2017 at 1:56 pm

They work! Whole Foods and thrive market have vegan mallows 🙂

This looks soo good & I want to point out so that other readers can take note- Trader Joe’s marshmallows are actually vegan! In the vegan world, we all went nuts when we realized this. 🙂 They come in the blue bag pictured in this post & are so yummy. Enjoy!

This is perfect! My wife and I are fitness nuts and our 10-year anniversary is in a few days. I was looking for a healthy recipe for the special night. I think I may try this one out but I’m going to creep your blog and see what else I can find. Awesome little site.

    • Fitnessista on August 23, 2017 at 7:58 pm

happy anniversary! hope you find something wonderful to make 🙂

OMG Gina!!!! These are deeeeeee-vine! I don’t know what size of jars you used or how far you filled them, but I got about 6 servings out of 1 batch! I doubled mine because I soaked a lot of cashews. For the second batch I didn’t have anymore honey so I used coconut sugar, didn’t have enough cocoa powder so I used powdered chocolate PB, used all the coconut oil on the 1st batch so I used canola oil. It all worked and tastes SO, SO delicious.

    • Fitnessista on September 20, 2017 at 12:32 pm

so so happy you liked them!!

I would love to try this. My daughter is allergic to cashews though! I assume I could just do the avocado chocolate pudding sub right? Or any ideas? It doesn’t have to be vegan.
