Light Mojitos with Honey Simple Syrup
Hi! Happy almost-Friday 🙂
Did you know tomorrow is National Mojito Day??
Regarding “food holidays,” I think some are pretty awesome (Chocolate Pudding Day!) and some are kind of boring. Apparently one day last week was National Eat Beans Day. Eat Beans Day?! This is where everyone in my [Hispanic] family (including yours truly) collectively shakes their head and says, “Everyday is eat beans day.”
But National Mojito Day? I’d like to celebrate that 🙂
The Pilot is the king of mojitos. He uses powdered sugar, so you can’t taste the alcohol, and they’re minty, sweet, and will punch you in the face if you know what I mean.
I decided to make a lighter version, because I recently learned that you can use equal parts honey and water to make a simple syrup and was excited to give it a whirl.
So, I made a little simple syrup with equal parts honey and water,
and allowed it to cool to room temperature. After that, I added lots of fresh mint, lime juice, rum, and sparkling lime water.
Shake it,
pour it,
drink it.
A refreshing summer cocktail, indeed.
Here’s the recipe if you’d like to give it a try!
Light mojitos with honey simple syrup
A refreshing and delightful summer cocktail!

- For the cocktail, combine the simple syrup, rum, mint, lime juice, sparkling water and a few ice cubes in a cocktail shaker. Shake and serve over lime slices with extra mint for garnish.

Well, this sounds amazing even before 800, which probably says something about me. 😉 Speaking of food holidays, now I need to figure out when National Tamale Day is celebrated…
that should also be everyday 🙂
The perfect summer drink!
This looks delicious and perfect for a hot summer day! Thanks for sharing :D!
Yummmmmmmmmmmmmmmmm!!!! This is on the to-do list for sure. I like muddling a couple pineapple chunks into my mojitos 😉
Pineapple mojito?! NOM 🙂
Love this idea! Although, I would add the sparkling water after shaking it so it doesn’t go flat. I love the bubbles. 🙂
Those look so refreshing. I love mint-anything. Also I’ve never heard of using powdered sugar in mojitos…good to know for when I really want to kick it up. Ha.
Mmmmm! Sounds so refreshing right now even though it’s only 11am!!! Hahaha
Can you use raw honey for this recipe?
Thanks for the awesome idea! I’ll be making these for my 21st birthday this weekend 🙂
mojitos are one of my favorite cocktails! thanks for the honey idea 🙂
I’m not a rum girl. It’s too sweet for me! I bet this would be good with vodka though.
This looks so amazing!!
Mmm I love a good mojito!! I had no idea that you could make simple syrup with honey either– that’s too cool! Can’t wait to give these a try!
National Mojito Day ehhh?! I might have to make myself a drink! Sounds delicious.
Oh I love moijitos! Wishing more than anything I could have one of these right now!
Hello perfect summer drink! Thanks for sharing!
Yummmm!
I love using honey over refined sugars! I might virtually celebrate National Mojito Day with you!
waaaaah I want to celebrate National Mojito Day. 🙁 Also, WHERE did you get that glass?! Mason jar with a handle plus chalkboard?! Amazing.
thank you! they were a gift from my stepmom but i think she got them at pier 1
I love that you made a simple syrup with honey!
These look so refreshing! I would have never thought to use honey and water for a simple syrup, and I’m wondering if agave nectar would achieve the same result? Maybe not since honey is more viscous? I should give it a whirl just to be sure, right?
These look so refreshing!! Is it just me, or are drinks tastier in a cute glass?
Great version! I always order drinks without the simple syrup- so this honey variation is something I might try at home!
These food holidays are all so strange! Who makes them up anyway? The food councils, that who I think. I used to live in Korea, and they celebrated a holiday all about these cookies called Peppero (like little skinny cookie sticks dipped in chocolate). The kids would all bring boxes of them to school and share with their friends. It was actually a huge holiday there- stores would have out big gift baskets filled with treats and those cookies, and even adults would buy gifts for their friends. That food manufacturer sure was successful with his “food holiday!”
This cocktail looks delicious and it just so happens I have some rum that needs drinking…
I love mojitos and so happy that mojito day lands on a Friday! Tomorrow will be fun! I might try to use this recipe with stevia and see what happens!
My husband likes to make mojitos too and I’m always looking for a “skinny” version for me. In fact, I usually just have him (or bartenders) use Splenda instead of simple syrup, but this is a great option too.
How do I always miss these fun days of celebration! Yum! Love that you used sparkling lime water. Might have to have a belated celebration tomorrow 🙂
Looks delish! Glad I could help with the simple syrup 🙂
Ooo I did NOT know but now we’ve booked in a date night at the local place I’ve been dying to try. Mojitos are my fave
Saving the date for next year – Mojito party! With a MYO mojito bar (watermelon, lychee, spicy… )
My husband makes a lemony drink with simple syrup but would prefer honey (it just normally goes solid when he puts it in) but I’ll give him this recipe!!
