Homemade Sous Vide Egg Bites (without the sous vide machine)
Word to the world: we have a sous vide egg bites problem.
When I first heard about these things months ago, I got myself to a Starbucks ASAP. Eggs are my favorite food on the planet, and I was so pumped to get a protein-y egg bite with my morning latte. Until, I couldn’t find them in San Diego. Anywhere. Sometimes, I would just ask for them when we’d go to different locations, and every single time I was turned down by the barista.
Once I asked why they didn’t have them, and the girl told me that it was because they were too popular and they couldn’t keep up with demand.
Get rid of something because it’s too popular?? #thingsthatmakezerosense.
Wiping a silent tear off my cheek, I vowed to myself that I would find them.
The same thing happened in Tucson. The mysterious egg bites were nowhere to be found.
When we drove into Valdosta, I decided to casually ask at the Drive-Thru if they had sous vide egg bites even though I didn’t see them on the menu. It was more out of habit than anything at that point.
“Yeah, what flavor would you like?”
“WHAT FLAVOR WOULD I LIKE?! Do you know what this means?!?”
I jumped out of the window and hugged the giant glass menu, then did a victory dance.
Ok, no I didn’t. I ordered roasted red pepper and went on my merry way, even though I was smiling like a creeper when I paid for my order.
They were everything I dreamed of. And since that day… I’ve had them a lot. Like, an embarrassing amount.
After Googling the ingredients online, I decided to try and make a slightly healthier version.
One major change: I don’t own a sous vide machine, and don’t really have a desire to purchase one. #notarealchef
Instead, I used egg poaching cups in boiling water, and they cooked beautifully.

They were SO easy to make, and while they definitely won’t totally replace my Drive-Thru habit (oops), they’re an awesome substitute.
Here’s the recipe if you’d like to give it a try!!
Homemade sous vide egg bites without the sous vide machine
A healthier version of the popular Starbucks protein-packed snack
- Prep Time: 10
- Total Time: 10 minutes
- Yield: 6 1x
Ingredients
- 9 tablespoons egg whites (from the carton; you could also use 3–4 large fresh egg whites)
- 2 eggs
- 1 tablespoon brown rice flour
- 2 oz feta cheese
- 1 tablespoon almond milk
- 1/2 scallion, diced
- 2/3 roasted red bell pepper, chopped
- Salt and pepper
Instructions
- Start 1-2 inches of water to boil on the stovetop in a large pot.
- In a large bowl, whisk the eggs and egg whites together. Stir in the remaining ingredients, and season well with salt and pepper.
- Distribute the poaching cups into the water, and then carefully add your egg mixture into the cups. (I used an ice cream scoop to distribute the egg mixture.)
- Cover the pot, and poach for 8-10 minutes, until the middle is set.
- Remove the poaching cups and cool for 1 minute before gently removing each one with a spoon.
Notes
- Feel free to use any cheese you love, and add in fresh herbs!
- Store in the freezer or fridge to quickly reheat and eat.

Yum, those look great. Is your recipe for 4 ‘bites’? I have a 6-dish poaching pan, I think I’ll gross it up and keep the yolks. I can’t bring myself to throw them out. I still believe they’re good for me. My diet is too low-fat as it is.
I bet you could add some cottage cheese and cheddar and they’d be like your Nana’s egg dish.
the recipe made 6 bites. 🙂 if i use carton whites, i have no prob with adding whites for extra protein but otherwise i’ll use the whole egg

I have to be honest, I didn’t know what sous vide was. Hahahah! And I’ve also never seen these at Starbucks. But I like everything about eggs, so I’m intrigued! Nice job recreating! 🙂
you’re not missing out lol. i guess you can use it to make sure flavorful meats and veggies, but i’m good with kitchen appliances for a while. 😉

I am ADDICTED to the bacon gouda sandwich from Starbucks, but it’s stupid expensive and TINY so I started making my own. However that bad-boy packs some serious calories so it’s more of a treat than an every day thing. These are a great idea for an easy and healthy breakfast that I could prep ahead and freeze to grab on the go, as you mentioned in your recipe. Thank you!

We are definitely not real chefs either, but bought an sous vide after having the most amazing steaks ever! We cook steaks and veggie stuffed chicken in it and then toss them on the grill for a minute. The meat is so tender and juicy every time! It’s a guaranteed way to trick your friends into thinking you’re a gourmet chef with little effort!

The Starbucks in Bankers Hill at 5th & Laurel as you’re about to go over the bridge into Balboa Park almost always has them, not that you’re right around the corner or anything anymore 🙂 Glad you came up with your own version!
Im curious…what’s your typical latte at Starbucks? I typically just order coffee with a bit of cream and sugar free vanilla. Only because of calories and sugar though.

I’ve tried making them twice. First time I didn’t cook them long enough. Just tried again and I’m getting closer. They have a nice taste and the texture is close, but I’m not sure what I’m doing wrong. They still lack that velvety smooth texture that the Starbucks ones have. I followed your recipe exactly. Any ideas?

I would like to make 24 of these and take to a brunch party. Do you know if I could make them in cupcake tins with cupcake paper cups, or would that change the end result? Thanks for the recipe!
yes you could probably bake them like that, but they might get soggy in the paper. i would make them in advance, freeze, then reheat and put on a serving tray 🙂

Can you give me a little more detailed instructions on how to poach the eggs, for the cooking challenged? Do you leave the water boiling? Turn it down to simmer? I’ve never poached eggs before! Tried this recipe and 2/3 of them spilled into the water and made a mess, I’m sure I was doing something wrong
es! just make sure you don’t fill the cups completely and that the water is at a slow boil (more like a simmer than bubbling like crazy)

I am highly addicted to the Starbucks version so I was excited to give these a whirl. They turned out great! I used my poaching pan and they did take a bit longer to cook in the middle. I might try in the oven in muffin tins next time to get that crispy texture like Starbucks but I wouldn’t change the recipe- I would also chop the red peppers more finely next time. I just recently discovered the Starbucks Sous vide bite addiction (after a friend was talking about making them in her instapot so I had to find out what she was raving about)….
And then I found your recipe …. used my silicone cupcake liners …. bought a 6 pack of egg whites cartons at Costco ….and now I can stop buying these at Starbucks . THANK YOU!
