For today’s post, I’m re-sharing this recipe because it’s something we’ve had so often for breakfast lately!

Chocolate Protein Chia Pudding

With our crazy morning schedules, I’m a huge fan of anything I can make in advance for breakfast. We love things like the breakfast cookie, this protein oatmeal bake and this vegan peach oatmeal bake. When breakfast is waiting, it guarantees that I’ll have something to eat in the morning, because sometimes it’s too busy around here to make the usual egg scramble until after both kiddos are dropped off.

Here’s a chia protein pudding recipe that our entire family loves! It’s protein-packed, full of healthy fats, and high in fiber, so when I pair it with a side of scrambled eggs I’m full and satisfied for hours. You can customize it by adding any fruit or toppings you’d like. My go-to’s are berries, cacao nibs and unsweetened coconut.

Here’s the healthy recipe if you’d like to give it a try!

Ingredients For Chia Seed Pudding:

  • chia seeds
  • vanilla or chocolate protein powder
  • cinnamon
  • sea salt
  • maple syrup (can also add a splash of vanilla extract)
  • almond or coconut milk (use less for a thicker pudding)
  • granola, berries, coconut, hemp seeds, cacao nibs, peanut butter, gogi berries, etc.

Vegan Chocolate Chia Pudding

Ingredients

Scale
  • 2 tablespoons chia seeds
  • 1 scoop vanilla or chocolate protein powder
  • 1/4 teaspoon cinnamon
  • Pinch of sea salt
  • 1 tablespoon maple syrup
  • 3/4 cup – 1 cup almond milk (use less for a thicker pudding)
  • Toppings: granola, berries, coconut, hemp seeds, cacao nibs, gogi berries, etc.

Instructions

  1. Mix all ingredients in a glass or small bowl.
  2. Cover and set in the fridge overnight.
  3. The next morning, stir well, add your toppings, and go!

    Good luck with the morning routine! It takes awhile to get used to getting up early, but eventually it works out. Having a solid night time routine and sticking with it helps.

    The early morning routine is hard with the little kiddos, I am an early riser by nature, and prefer to work out first thing, but I feel like every time I get up super early to do so, one of my little beans also wakes up super early in need of cuddles.

    What is p doing up for 3 hours? I agree that a lot of productivity, routine advice does not take small kid realities into account. There are a lot of things I’d like to fit into my day but don’t work with my priority (sleep, energy, meaningful parenting) and time constraints. So I remind myself that maybe one day (but I’ll probably just be bummed I’m not at the park climbing up the jungle gym with my little like a fool anymore).

    With our nicer (I won’t say warmer because that’s not true yet!) weather I am starting to think more about smoothies for breakfast and moving away from heavier meals like oatmeal, etc. The change of season also makes my choice is wine change too! No longer I am craving heavy reds but am excited about chilled rose and white wines!!

        i’ve given them a half scoop of equalife DNS, truvani, and now foods – i go for the ones with super simple ingredients and also add oats to theirs to thicken it up a bit more

    Another healthy Choco option I’ve been digging is adding a tbsp of raw cacao to the chia pudding! And alternating between almond milk & full fat coconut milk.
    Then, I scoop it into a small jar parfait style with fruit, coconut (full fat whipped coconut milk or shreds), cacao nibs, a little local honey, and some slivered almonds. 🙂
    Good luck with the waking up early! It is tough at first and all about getting out of your own way, but once you do it is so worth it! Even if it’s just an extra 10 minutes in the morning for “me time” while watching the sunrise with an apple cider vinegar detox drink.

    YUM! I’m 27 weeks pregnant and craving chocolate all the time, so this will be a perfect snack to have on hand! I’m wondering if even my picky, choca-holic-daughter will eat it…

    Hello!

    I tried out the recipe, and ended up needing to add about an extra cup of almond milk for it to be palatable. I am wondering if my protein scoop was much larger than yours (I used a different brand), which caused the pudding to be like a horrible protein powder paste. After watering it down the next day with a bunch of extra almond milk it was better. Still tasted basically like chocolate protein powder, but the gritty texture was lessened.

    Would you be willing to share how much protein powder you use in the recipe using g or tablespoons?
